(a) The grading of food establishments is based on a system of scoring. A food establishment that earns a score of at least:
(1) 90 percent shall receive a grade A;
(2) 80 percent and less than 90 percent shall receive a grade B;
(3) 70 percent and less than 80 percent shall receive a grade C.
Permits shall be immediately revoked in accordance with G.S. 130A-23(d) for food establishments receiving a score of less than 70 percent.

Freezer door was propped open to rapidly cool walk-in refrigerator. Ambient temperature dropped to at least 41F within a few minutes. Repair technician was called for an emergency repair. Keep freezer door propped open to help maintain temperature until repair is made. Verification required.

Dish machine needs to be serviced before next use. Employee stated items are being washed, rinsed and sanitized in three compartment sink. Continue to use the three compartment sink until dish machine is serviced.
19 3-403.11 (A),(D); Priority; Ribs in hot holding cabinet at 79-83F. Employee stated ribs were removed from walk-in cooler and placed into cabinet. Reheat all TCS foods to 165F within 2 hours if food is to be hot held until service. Educated about reheating ribs in oven or other cooking equipment within 2 hours before placing into hot holding cabinet. Ribs moved into oven during inspection.
23 3-501.18; Priority Foundation; Date marking missing on multiple items in reach in coolers and walk in cooler (hard boil eggs, potato salad, brisket and ribs). One ranch container dated 10/28 in walk-in cooler. Potentially hazardous foods opened or prepared, in the establishment and kept for more than 24 hours shall be date marked. Date marking shall not exceed 7 days excluding time in freezer. Date marking should be either a preparation date, or a consume-by/discard date.
