Local Restaurant Inspections for Holly Springs, Apex, and Fuquay-Varina (June 1 through June 15)
It was a busy two weeks for health inspectors with a total of 34 restaurants visited and inspected.
Rules Governing the Sanitation of Food Service Establishments
Rule (15A NCAC 18A .2662 GRADING)
(a) The grading of food establishments is based on a system of scoring. A food establishment that earns a score of at least:
(1) 90 percent shall receive a grade A;
(2) 80 percent and less than 90 percent shall receive a grade B;
(3) 70 percent and less than 80 percent shall receive a grade C.
Permits shall be immediately revoked in accordance with G.S. 130A-23(d) for food establishments receiving a score of less than 70 percent.

47 4-501.11 Water dispenser actuator broken at drink station and a spoon is taped to the unit to make in work. Equipment shall be kept in good repair. Repair or replace as necessary.
4-101.19 Tape on water dispenser is not considered non-absorbent or easily cleanable. Nonfood-contact surfaces of equipment that are exposed to soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
49 4-601.11 (B) Some white soil debris on walk in cooler wire shelving. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of dust, dirt, food residue, and other debris.
55 6-501.11 (C) Floors at cook line near fryers and grill are pitting, making them no longer smooth. Walk in cooler floors are buckling at the seams making floors no longer smooth, cleanable, and nonabsorbent.
56 6-501.110 Eyeglasses on shelf over prep sink. Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions. No points taken.

39 3-305.11 Food stored in plastic container on floor in walk in cooler under shelves. Store food in a clean, dry location, not exposed to contamination. Keep at least 6 inches above the floor. Though in a container, the problem arise when container is picked up off floor and laid on a clean food prep area.

Be sure to stir more often when reheating in steam unit or use stove/microwave.
44 4-901.11 Observed clean inverted plastic food containers stacked wet. After cleaning and sanitizing, equipment and utensils shall be air-dried. Completely air dry these items before stacking them.
49 4-602.13; Core; Food debris build-up on interior reach in coolers and wire shelving in walk in cooler. Nonfood contact surfaces shall be clean as frequently as necessary to preclude accumulation.
56 6-403.11; Core; Two employee beverages on prep areas in kitchen. Cell phone on prep area. Employees' drinks shall be located on a bottom shelf and covered and employee items shall not be placed in area where they can contaminate food.

41 3-304.14(B) Observed two buckets with wiping cloths in quaternary ammonium sanitizer of less than 200 ppm. They shall be kept in approved, clean QA sanitizer at 200-400 ppm concentration. Made new batch of quat for wipes.
