It was a busy two weeks for health inspectors with a total of 30 restaurants in Holly Springs (8), Apex (17) and Fuquay-Varina (5) visited and inspected. Scores ranged from 91.5 to 100.
Rules Governing the Sanitation of Food Service Establishments
Rule (15A NCAC 18A .2662 GRADING)
(a) The grading of food establishments is based on a system of scoring. A food establishment that earns a score of at least:
(1) 90 percent shall receive a grade A;
(2) 80 percent and less than 90 percent shall receive a grade B;
(3) 70 percent and less than 80 percent shall receive a grade C.
Permits shall be immediately revoked in accordance with G.S. 130A-23(d) for food establishments receiving a score of less than 70 percent.

Cold air must flow around product for effective cooling. Tuna salad was portioned into two containers and placed in the freezer to rapidly finish cooling. Sanitize food-contact surfaces and utensils in the 3-compartment sink using Quat until machine is repaired. Quat sanitizer was already available in three compartment sink during inspection. PIC showed a picture from yesterday that indicated the machine was working. Full points may be taken for repeat violations.
21 3-501.16(A)(1); Priority; A tray of cooked chicken in the hot box was observed holding near 118F. TCS foods held hot shall maintain a temperature of 135F or above for safety. Do not leave foods out for extended periods of time and do not place in hot holding units until they are fully operational. Steam tables should be sufficiently hot to hold food at correct temperature. CDI- chicken was placed on stovetop for rapid reheating to 165F+. Full points taken for repeated violation.
22 3-501.16 (A)(2) and (B); Priority; Multiple TCS (Time/Temperature Control for Safety) foods observed above 41F on the serving line (refer to temperature chart). Maintain TCS foods in cold holding at 41F or less. Foods on the serving line were placed in the freezer for rapid cooling and were not out longer than 3 hours according to PIC. Cooked eggplant was voluntarily discarded. Ice and pooled water was observed under the right side of this unit. Previous follow-up did not indicate any problems. Full points taken for repeated cold holding violations.
47 4-501.11; Core; Observed pooling and freezing condensation under the right side of makeline refrigeration unit. Maintain equipment in good repair so that it is easily cleanable. PIC to ensure this unit is working. A verification visit will be made to follow up on this repair. Previous follow-up did not indicate any problems.

Upper management had two upright reach-in coolers installed. One cooler holds the deli meats and other sandwich ingredients. The inefficiency of the set up was addressed under cold holding. Walk-in cooler is being used for dry storage. EHS recommends repairing the walk-in cooler per cold holding capacity, maintaining equipment in good repair, and permit conditions requirements.
